Apple and Sausage Stuffing

Ingredients

1 onion 3 stalks celery 2 apples 2 dates 2 teaspoons fresh sage ¼ teaspoon fresh rosemary 3 tablespoons extra virgin olive oil, or bacon fat 2 teaspoons dried thyme ¼ teaspoon dried marjoram ¾ teaspoon sea salt, plus more to taste ground black pepper, to taste 1 pound sweet Italian pork sausage 3 eggs 2 cups almond flour

Instructions

1. Preheat oven to 350F.

2. Clean, peel, and dice onion and celery. Peel, core, and dice apple. Pit and chop dates finely. Mince fresh herbs.

3. In a large pan over medium high heat, add olive oil. Cook diced onion, celery, apple, herbs, sea salt, and pepper until the veggies and apple begin to soften.

4. Remove sausage from casing, and add to the saucepan. Brown, using a wooden spoon to break sausage into tiny pieces. Remove sausage mixture from pan and set aside.

5. In a large bowl whisk the eggs. Add the almond flour, chopped dates, and the cooked ingredients and combine well.

6. Grease a medium sized casserole dish and press mixture into the dish.

7. Bake covered for 45 minutes. For the last 5-15 minutes bake uncovered and allow the top to brown slightly.
