Apple Cake

Ingredients

3 cups Fuji apples, or Gala apples (skin-on) 1 cup chopped pecans 1 ½ cups coconut oil ¾ cup honey 3 eggs 2 ounces full fat coconut milk 3 cups almond flour 6 tablespoons coconut flour 1 teaspoon baking soda ¼ teaspoon sea salt 1 tablespoon cinnamon 1 tablespoon vanilla

Instructions

1. Preheat the oven to 325F.

2. Grate the apples and chop pecans. Melt the coconut oil, if not already liquid.

3. Stir together honey, eggs, oil, coconut milk, almond flour, coconut flour, baking soda, sea salt, cinnamon and vanilla in a large bowl.

4. Fold in apples, and pecans.

5. Pour the batter into a greased and floured bundt pan.

6. Bake for 1 hour until cake tester comes out clean and cake is a golden brown.

7. Let the cake stand for 1 hour and then invert it onto a cake stand.

8. Serve warm or at room temperature.
