Apple, Fennel and Celeriac Slaw

Ingredients

1 small celeriac 1 green apple 1 small fennel bulb 1 tablespoon fresh parsley ½ lemon 2 tablespoons apple cider vinegar 1 teaspoon honey 1 teaspoon Dijon mustard 3 tablespoons extra virgin olive oil sea salt, to taste ground black pepper, to taste

Instructions

1. Peel and julienne celeriac, apple, and fennel bulb. Mince parsley.

2. Juice lemon. Whisk together the rest of the ingredients for the dressing into a small bowl. Set aside.

3. Rinse the celeriac in cold water and then pat dry.

4. Add the celeriac to a large mixing bowl with the parsley, apple, and fennel. Pour the dressing over and toss thoroughly to combine. Serve.
