Apple Muffins with Coconut Butter Frosting

Ingredients

For the apple muffins: 3 eggs 3 apples ⅓ cup honey 1 ½ teaspoons cinnamon ½ teaspoon ground ginger ¼ teaspoon ground cloves ¼ teaspoon nutmeg ½ teaspoon sea salt 1 tablespoon baking powder 1 cup coconut butter For the frosting: ½ cup coconut butter ½ cup honey 1 teaspoon vanilla ½ cup water

Instructions

1. For the apple muffins: Preheat oven to 350F.

2. Allow eggs to come to room temperature. Peel, core, and chop apples.

3. Whisk together eggs, honey, spices, salt, and baking powder.

4. Stir in soft coconut butter (put it in a jar of hot water if too hard) until thoroughly combined.

5. Stir in apples then pour batter into muffin tins. You can fill them more than regular muffins as they don’t rise as much.

6. Bake for 20-25 minutes or until golden brown. Take out of oven and allow to cool.

7. For the frosting: In a food processor or blender, mix soft coconut butter, honey, and vanilla.

8. Add water until desired consistency is reached. If using store-bought coconut butter, you will only need about half the water.

9. Spread or pipe onto muffins.
