1. For the crust: Melt coconut oil. Whisk egg.
2. It's easiest to make this in your food processor - add the flour and salt to the food processor, then stir in coconut oil and egg. Pulse until mixture begins to form a ball.
3. Divide dough in half to make two pie crusts.
4. You can then roll out the dough to a thin 1/4 inch for each crust. Then place one crust in pie pan.
5. For the filling: Preheat oven to 400F.
6. Peel pears and apples, then slice to your preferred size.
7. Add fruit and juice to a large bowl and stir in coconut sugar. Allow to sit for 10 minutes, then stir in ginger, cinnamon, and arrowroot.
8. Pour fruit into pie pan and top with the remaining pie crust. Cut slits in the top of the crust to allow steam to come out.
9. Bake at 400F for 20 minutes, then reduce heat to 325F for another 25-30 minutes.
10. You'll know the pie is ready when the top is golden brown and you can see the juices bubbling at the top.
