Apricot Almond Oatmeal

Ingredients

1 cup dried apricot ¼ teaspoon sea salt 5 ⅓ cups water 2 cups oats 2 tablespoons honey, plus more for drizzling 2 teaspoons cinnamon 4 tablespoons coconut milk yogurt ⅛ teaspoon cardamom, optional 1 cup sliced almonds

Instructions

1. Chop apricots.

2. Add salt to water and bring to a boil.

3. Once water is boiling, add oats and stir. Reduce heat to a simmer and cook for 3-5 minutes, or until thickened.

4. Remove from heat and add honey, cinnamon, yogurt, and cardamom. Stir to combine.

5. Top with apricots and sliced almonds and finish with a drizzle of honey, if desired.
