Apricot and Arugula Salad

Ingredients

1 tablespoon fresh chives 6 apricots 3 tablespoons balsamic vinegar 3 tablespoons extra virgin olive oil 1 teaspoon mustard ⅛ teaspoon sea salt, to taste 6 ounces arugula

Instructions

1. Mince chives. Remove pits from apricots and chop into bite sized pieces.

2. Whisk balsamic vinegar, olive oil, and mustard in a small bowl until incorporated.

3. Add chives and a pinch of salt and whisk again. Taste and add more salt if needed.

4. Toss apricots with arugula and drizzle vinaigrette liberally on top.
