Arugula, Avocado and Grapefruit Salad

Ingredients

1 lemon 2 avocados 1 pink grapefruit ½ cup extra virgin olive oil 1 teaspoon sea salt, or to taste ½ teaspoon ground black pepper, optional 4 cups arugula

Instructions

1. Juice the lemon. Peel, pit, and dice avocados. Segment the grapefruit, removing and discarding pulp and exterior membranes.

2. Place the olive oil, lemon juice, salt, and pepper into a small glass jar. Secure the lid and shake well until dressing is well combined.

3. Toss arugula in the dressing, to taste.

4. Top arugula with avocado and grapefruit. Serve and enjoy!
