Arugula Salad with Mustard Vinaigrette

Ingredients

1 clove garlic 1 lemon 1 teaspoon Dijon mustard 6 tablespoons extra virgin olive oil ¾ teaspoon sea salt, to taste ground black pepper, to taste 5 cups arugula

Instructions

1. Peel and mash garlic, and juice the lemon.

2. In a small bowl, add garlic, lemon juice, and mustard; mix well.

3. Slowly pour in olive oil while constantly whisking.

4. Add salt and pepper to taste.

5. In a large serving bowl, toss arugula and dressing and serve immediately.
