Baked Lentil Falafels

Ingredients

19 ounces cooked lentils 2 cloves garlic ¾ bunch fresh parsley 2 tablespoons lemon juice 1 ½ tablespoons extra virgin olive oil 1 teaspoon sea salt 2 tablespoons gluten-free all-purpose flour

Instructions

1. Preheat oven to 350F. Drain lentils. Peel garlic.

2. Pulse all the ingredients (except the flour) in a food processor until well combined. The mixture should look like semi-dry crumbs and should hold together when pressed.

3. Stir in the flour, and then form the mixture into patties, using a large tablespoon of mixture for each falafel.

4. Place on a baking sheet and bake in the oven for 18-20 minutes.
