Baked Sweet Potatoes

Ingredients

4 medium sweet potatoes 2 tablespoons extra virgin olive oil, or more to taste sea salt, to taste

Instructions

1. Preheat oven to 400F. Wash potatoes and puncture several times with a fork.

2. Place potatoes in a non-reactive baking dish and bake for about 1 hour.

3. The potatoes are fully cooked when they are soft when you gently squeeze them. (Use an oven mitt--they're hot!).

4. Remove potatoes from oven. Using a clean towel to hold the hot potatoes, carefully slit open the potato lengthwise taking care to avoid burning yourself on the steam.

5. Use a fork to slightly mash the potato and add an even amount of oil to each potato. Serve with sea salt on the side.
