Banana Pancakes and Peanut Butter

Ingredients

3 bananas
4 eggs
¼ teaspoon baking soda
⅛ teaspoon cream of tartar
4 tablespoons coconut flour
1 teaspoon cinnamon
1 teaspoon vanilla
2 tablespoons coconut oil, or ghee for cooking
8 tablespoons peanut butter

Instructions

1. In a small bowl mix together baking soda and cream of tartar. Set aside.

2. Beat the eggs with a wire whisk. Mash the bananas and stir into the eggs.

3. Stir in coconut flour, cinnamon, baking soda mixture, and vanilla.

4. Allow batter to rest for a few minutes.

5. Meanwhile, heat some of the coconut oil in a pan over medium high heat until shimmering.

6. Pour batter, a quarter cup at a time, into the pan and cook as you would a regular pancake.

7. Flip to brown on both sides. Remove to a plate to keep warm. Add more oil to pan as needed to cook remaining pancakes.

8. Serve warm pancakes with peanut butter.
