Banana Pudding

Ingredients

13 ½ ounces full fat coconut milk 1 tablespoon gelatin ¼ cup water 2 tablespoons honey 3 bananas 1 tablespoon vanilla 4 tablespoons slivered almonds, optional

Instructions

1. Heat the coconut milk over medium heat.

2. Dissolve the gelatin into the water.

3. Slowly add the gelatin into the coconut milk.

4. Add the raw honey and vanilla.

5. Peel and mash 2/3 of the bananas and add them in, or break them into pieces, add them to the mixture, and use a hand blender to thoroughly blend.

6. Pour into a glass container and chill in the fridge for at least an hour.

7. While the pudding is chilling, peel and slice remaining banana. Serve pudding in individual dishes, garnished with banana slices and slivered almonds.
