BBQ Pork Ribs

Ingredients

4 pounds baby back pork ribs ¼ cup cane sugar 1 tablespoon sea salt, to taste ½ teaspoon ground black pepper 2 tablespoons cajun seasoning 1 teaspoon ground mustard 1 cup barbecue sauce

Instructions

1. Preheat oven to 300F.

2. Prep the ribs: There may be a tough, rubbery membrane on the underside. If so, score meat between bones (being careful not to cut the meat) and pull membrane away.

3. Combine sugar, salt, ground pepper, Cajun seasoning, and ground mustard.

4. Working with 1 rack at a time, lay a large piece of parchment-lined foil on a work surface, place rack on parchment, and liberally coat both sides with rub.

5. In the oven: Fold foil and parchment around ribs, crimping the edges together to form a packet.

6. Place rib packets on a rimmed baking sheet. Bake until a knife can pierce meat with no resistance, 2 to 2 1/2 hours.

7. Remove ribs from oven. Heat broiler. Unwrap ribs, place on sheet, and brush with barbecue sauce.

8. Broil until sauce is bubbling and ribs are lightly charred, about 5 minutes, brushing with more sauce if desired.

9. On the grill: Heat the grill to 200 F. Place the rack meat side down on the grill over the drip pan. Close the lid and cook for between 1 1/2-2 hours.

10. Turn ribs every 20-30 minutes. In the last 15 minutes of cooking time, brush with BBQ sauce.

11. The ribs are done when the meat begins to pull away from the bone by about a half inch to an inch.

12. Serve immediately.
