Blueberry Compote

Ingredients

4 cups blueberries, fresh or frozen ½ cup cane sugar ½ cup water 1 teaspoon lemon juice, optional

Instructions

1. Place berries in a sauce pan along with cane sugar and water.

2. Turn heat to medium-high and bring to a boil.

3. Lower heat to medium and allow berries to simmer for 7-8 minutes.

4. If you prefer a smoother compote, you can use a potato masher to further break up the berries.

5. Add lemon juice and stir.

6. Serve compote warm, at room temperature, or cold as a topping for pancakes, waffles, porridge, or crepes.
