Braised Chard

Ingredients

12 cups swiss chard 1 teaspoon lemon juice, preferably freshly squeezed 2 tablespoons extra virgin olive oil, or cooking fat of choice 3 tablespoons chicken broth, plus more as needed ⅛ teaspoon sea salt, to taste

Instructions

1. Chop chard. Juice lemon.

2. Heat the fat in a large skillet over medium-high heat.

3. Add the chard and ⅓ or all of the broth. Stir relatively frequently. If the broth evaporates before the greens are fully cooked, add a little more.

4. When the greens are done to your liking, taste and season with salt and lemon juice.
