Breakfast Pizza - Pancetta, Tomato and Basil

Ingredients

2 ¾ ounces cherry tomatoes ¼ cup fresh basil 6 eggs 12 slices pancetta ⅛ teaspoon ground black pepper, to taste

Instructions

1. Slice the tomatoes in quarters, and mince the basil.

2. Top prepared crust with the pancetta, two slices together, as nest for the eggs.

3. Crack the eggs into the pancetta nest. Arrange tomatoes pieces around the egg cups.

4. Bake for about 8-10 minutes and egg whites are opaque.

5. Sprinkle with fresh basil and a few generous grinds for fresh pepper.

6. Slice and serve.
