Broccoli and Ham Frittata Muffins

Ingredients

1 tablespoon extra virgin olive oil, for greasing ⅓ head broccoli 4 ounces ham 6 eggs ½ cup water ¼ teaspoon sea salt, to taste ¼ teaspoon ground black pepper

Instructions

1. Preheat oven to 375F. Grease a regular-sized muffin tin with oil.

2. Mince the broccoli florets and ham finely.

3. In a large bowl, whisk together the eggs, water, salt, pepper, ham and broccoli.

4. Carefully pour the egg mixture into each cup, filling halfway.

5. Bake for about 15 minutes. They will look puffed and golden when done.

6. Make ahead for quick breakfasts on busy days. Mini frittatas can be reheated in a toaster, oven, or even a microwave - or enjoy them cold.
