Broccoli Bacon Soup

Ingredients

12 ounces bacon ½ onion 1 teaspoon sea salt, to taste 1 parsnip 1 large carrot 3 cloves garlic 2 stalks celery 3 heads broccoli ¼ bunch fresh parsley 6 cups chicken broth ground black pepper, to taste

Instructions

1. Chop bacon roughly and cook in a large saucepan over medium heat.

2. While bacon is cooking, peel and chop onion and add to the pot with sea salt, stirring a few times.

3. Peel, chop, and add parsnip, carrot, garlic, and celery, one at a time, stirring in between each addition.

4. Sauté the mixture about 10 minutes. Remove a small amount of the cooked bacon and set aside to use as a garnish, if you'd like.

5. Chop the broccoli and parsley.

6. Add broth and chopped broccoli. Bring to a boil, then reduce and simmer for 30 minutes.

7. Using an immersion blender, blend in the pot until smooth (or desired consistency).

8. If using a standing blender, be sure to blend in small batches to prevent burning yourself.

9. Season with salt and pepper, to taste. Garnish with chopped parsley and reserved bacon.
