Broccoli Ham Frittata+

Ingredients

2 tablespoons coconut oil, plus more to grease the dish 1 onion 1 head broccoli 1 pound ham 1 red bell pepper 5 ounces mushrooms 1 teaspoon coarse sea salt, plus more to taste 10 eggs ¼ cup water ½ teaspoon hot pepper sauce ½ teaspoon lemon juice

Instructions

1. Grease an oven safe baking dish (a pie or tart pan works great here - and the wider the better for best results with texture). Preheat oven to 350F.

2. Finely dice onion. Chop broccoli finely. Thinly slice the mushrooms. Dice the ham and bell pepper into 1/2 inch cubes.

3. Heat coconut oil in a large pan over medium high heat. When shimmering, add the onion, bell pepper and sea salt, and sauté until onion begins to soften. Add the ham; cook for 3-4 minutes more. Stir in the broccoli and remove from heat without cooking.

4. In a large bowl whisk eggs, water, hot sauce, and lemon juice. Spread the onion/ham/broccoli mixture into your greased baking dish.

5. Pour egg mixture over top. Bake for approx. 20 minutes, or until the eggs are set. Remove from oven and cool for about 10 minutes before serving.
