Cajun Beef and Vegetable Rice

Ingredients

3 large carrots 2 bell peppers 4 green onions 1 tablespoon avocado oil 1 ½ pounds ground beef ⅛ teaspoon sea salt, to taste ⅛ teaspoon ground black pepper, to taste 2 teaspoons cajun seasoning 1 tablespoon tomato paste 2 cups cooked rice 4 tablespoons water

Instructions

1. Slice carrots, bell peppers, and green onions.

2. Heat the oil in a large pan over medium heat. Add the carrots, bell peppers and white parts of the green onions. Sauté for 10 minutes until the vegetables start to soften.

3. Add in the ground beef and season with salt and pepper. Cook for 10 minutes, until the meat is browned.

4. Add the cajun seasoning and tomato paste then stir well. Add in the cooked rice along with the water.

5. Stir well to combine all of the ingredients and continue cooking for about 3-4 minutes.

6. Sprinkle with the green parts of the green onions and serve.
