Cannelinni Beans

Ingredients

1 cup dried white beans 1 ½ teaspoons lemon juice 3 cups water, plus more as needed

Instructions

1. Place beans in a large bowl. Cover completely with water and add lemon juice. Allow to sit in a warm spot in your kitchen for up to 8 hours.

2. When ready to cook, rinse and drain beans well until the water runs clear.

3. Place beans in a large pot and cover with 1 inch water above the beans.

4. Bring pot to a boil, skimming off any foam that rises to the top of the water. Simmer on low for about an hour, or until beans are tender.

5. Extras can be frozen for quick beans for future dishes.
