Caribbean Coleslaw

Ingredients

1 head napa cabbage 4 green onions 1 mango 2 red jalapeño peppers 1 red bell pepper 2 limes 3 tablespoons honey ¼ cup apple cider vinegar ½ cup extra virgin olive oil ¾ teaspoon sea salt, or to taste

Instructions

1. Remove and discard the cabbage cores and finely shred leaves. Cut green onions into ribbons. Peel and slice mango. Slice and deseed jalapeño and bell peppers. Juice limes.

2. Put the honey and vinegar in a mason jar. Secure the lid and shake well. Add the oil, salt, and lime juice.

3. Add the cabbage, green onion, mango and both kinds of peppers to the bowl and and mix well. Adjust seasoning to your taste.

4. Allow to marinate for at least 1 hour before serving.
