Carrot-Lime Slaw

Ingredients

2 cloves garlic 2 limes ½ cup extra virgin olive oil ¾ teaspoon sea salt, or to taste 3 carrots 1 head green cabbage ½ bunch cilantro

Instructions

1. Peel and chop the garlic. Juice limes.

2. Place garlic, lime juice, olive oil, and sea salt in a blender and blend until smooth.

3. Peel and shred carrots and cabbage and chop the fresh cilantro.

4. Combine all ingredients in a large bowl, toss with the dressing. Add additional sea salt to taste and serve.
