Cashew Butter Chocolate Chip Muffins

Ingredients

½ cup cashew butter 1 ripe banana 2 eggs ¼ cup honey ⅓ cup coconut flour 2 tablespoons ground flaxseed 1 teaspoon vanilla ½ teaspoon baking soda ¼ cup dark chocolate chips

Instructions

1. Preheat oven to 375F. Grease a muffin pan with coconut oil or use paper muffin cups.

2. Blend all ingredients in a blender, except for chocolate chips. Blend until batter is smooth.

3. Stir in chocolate chips by hand.

4. Pour batter into prepared muffin pan or muffin cups. Fill each cup 3/4 full.

5. Bake for 12-14 minutes, until a toothpick inserted into the middle comes out clean.

6. Allow muffins to cool for at least 10 minutes before removing.

7. Serve immediately or store in an air-tight container for up to a week.
