Cassava Waffles

Ingredients

1 ¼ cups cassava flour ¼ cup arrowroot 1 teaspoon baking soda ¼ teaspoon sea salt 1 tablespoon apple cider vinegar 2 tablespoons pure maple syrup, plus more to taste ¼ cup coconut oil, plus more for pan 13 ½ ounces full fat coconut milk 1 tablespoon vanilla

Instructions

1. Use a spoon to scoop cassava flour into a measuring cup. With the back of a knife, level off the top so the flour is level with the top of the measuring cup.

2. Pour flour into a large bowl. Repeat with arrowroot.

3. Add remaining dry ingredients to bowl with flours, and whisk well to combine.

4. In a small bowl, mix together the wet ingredients. Pour the wet ingredients into the dry and mix really well to combine.

5. Heat your waffle iron, coat with coconut oil, and cook per instructions.

6. You may need to let it go a little longer than a regular waffle as it can take a little longer to brown.

7. Serve immediately drizzled with a bit of maple syrup.
