Chicken and Wild Rice Soup

Ingredients

1 cup wild rice 3 cups water 1 onion 2 stalks celery 2 carrots 1 tablespoon extra virgin olive oil 2 teaspoons minced garlic 1 teaspoon sea salt, to taste ½ teaspoon ground black pepper 2 tablespoons gluten-free all-purpose flour 8 cups chicken broth 1 pound cooked chicken 1 tablespoon Italian seasoning

Instructions

1. Cook wild rice by bringing rice and water to a boil in a pan, then reduce heat. Cover and cook for 30 minutes.

2. While rice is cooking. Peel and dice onion, celery, and carrots.

3. In a stockpot, heat olive oil over medium heat. Add garlic, onions, celery, carrots, salt, and pepper. Cook vegetables for 5-7 minutes until they soften.

4. Sprinkle in flour over vegetables and cook for another 2 minutes, stirring constantly to keep flour from burning. Then, slowly add chicken broth.

5. Stir in cooked chicken and Italian seasoning. Bring to a boil. Once boiling, stir in cooked rice and reduce heat to simmer for 15-20 minutes.

6. Taste and add additional salt and pepper as needed.
