Chicken Avocado Soup

Ingredients

¾ pound cooked chicken 6 green onions 2 cloves garlic 1 small jalapeño pepper 1 ½ Roma tomatoes 2 tablespoons extra virgin olive oil 6 cups chicken broth ¼ teaspoon cumin ½ teaspoon sea salt, or to taste ¼ teaspoon ground black pepper 1 ½ limes 2 large avocados ¼ bunch cilantro

Instructions

1. Shred chicken. Mince green onions (keep green and white parts separate). Peel and mince garlic. Deseed and mince jalapeño. Deseed and dice tomatoes.

2. In a large pot, heat olive oil over medium heat.

3. Once hot, add white parts of green onions and jalapeños. Sauté until tender, about 2 minutes, adding garlic during last 30 seconds of sautéing.

4. Add chicken broth, cumin, sea salt and pepper.

5. Bring mixture to a boil over medium-high heat. Juice the limes.

6. Reduce heat to low and add shredded chicken, tomatoes, and lime juice. Adjust the seasoning.

7. Peel, core and dice the avocados and chop the cilantro.

8. Just before serving, stir in cilantro and greens of green onions. Top with avocados and serve.
