Chicken Burrito Bowls

Ingredients

1 cup white rice 1 ½ cups chicken broth 1 ½ cups frozen corn 1 pound cooked chicken 2 cups cooked black beans taco seasoning, to taste salsa guacamole

Instructions

1. Rinse rice well, then cook in chicken broth until light and fluffy.

2. In a small pot, add the corn and cover with filtered water.

3. Cook over high heat until the water comes to a boil. Turn off heat and allow corn to sit in it for 3-5 minutes. Strain and allow to cool.

4. If desired, heat chicken, then shred into a large bowl. Add the black beans. Generously sprinkle with taco seasoning to taste.

5. Place corn into bowl with chicken/bean mixture, and combine well.

6. Place hot rice in bowls, top with chicken/bean mixture, corn, salsa, and guacamole.
