Chicken Fajitas

Ingredients

For the chicken: 1 ½ pounds chicken breasts 1 teaspoon minced garlic 2 tablespoons lime juice 3 tablespoons extra virgin olive oil 1 ½ teaspoons sea salt, to taste ½ teaspoon cumin ½ teaspoon chili powder For the fajitas: 1 onion 3 bell peppers 2 tablespoons extra virgin olive oil 8 corn tortillas ½ cup guacamole, optional

Instructions

1. For the chicken: Cut chicken into thin strips.

2. Combine chicken, garlic, lime juice, olive oil, and seasonings in bowl or ziptop bag. Let marinate for 30 minutes, or up to 8 hours in the refrigerator.

3. For the fajitas: Peel and slice onion. Slice bell peppers.

4. Add 1/2 of the oil to a skillet. Working in batches as needed, add chicken and cook until just cooked, about 4-7 minutes. Remove chicken from pan.

5. Add remaining oil to the pan, along with onions and peppers. Cook another 3-5 minutes, until hot and slightly softened.

6. Add chicken back to the pan and stir to combine. Make sure chicken is cooked until an internal temperature of 165F is reached.

7. Serve chicken fajitas in tortillas with guacamole.
