Chicken Lo Mein

Ingredients

12 ounces gluten-free spaghetti 1 pound cooked chicken ⅓ inch fresh ginger 1 tablespoon extra virgin olive oil 2 tablespoons tamari 4 teaspoons minced garlic ¾ teaspoon sea salt, to taste ¼ teaspoon ground black pepper 4 cups shredded green cabbage ½ cup shredded carrots ¼ cup rice wine vinegar ¼ teaspoon ground ginger ½ teaspoon red pepper flakes, optional 2 teaspoons honey ½ cup tamari

Instructions

1. Cook spaghetti according to the package directions.

2. Meanwhile, chop chicken and grate ginger.

3. In a skillet or wok, heat olive oil over medium-high heat.

4. Add chicken to the skillet, then add tamari, garlic, fresh ginger, salt, and pepper. Cook for 4-5 minutes to heat chicken through, then add cabbage and carrots.

5. While cabbage and carrots begin to cook, mix together vinegar, ground ginger, red pepper flakes, honey, and tamari.

6. Add sauce to the skillet and cook for another 3-4 minutes.

7. When noodles are done, drain and add to the skillet. Toss well, then serve.
