Chicken Tacos

Ingredients

2 avocados 3 green onions 1 pound cooked chicken ½ cup refined coconut oil, as needed taco seasoning, to taste 1 tablespoon lime juice 8 corn tortillas 1 cup salsa

Instructions

1. Peel, pit, and slice avocados. Dice green onions. Shred chicken.

2. Heat 1/4 of the oil in a pan. Add chicken to warm and season with taco seasoning to taste. Remove from heat and top with lime juice.

3. Melt another 1/4 of the oil in a large skillet until a white foam begins to form. Place a single layer of tortillas in the pan, cover, and cook until warmed.

4. Remove to a plate and repeat with remaining tortillas, adding more of the oil as necessary.

5. Serve tortillas topped with chicken, green onions, salsa, and avocado.
