Chili Lime Roasted Sweet Potatoes

Ingredients

3 tablespoons avocado oil 1 small lime 4 large sweet potatoes 1 tablespoon minced garlic 1 teaspoon chili powder 2 teaspoons sea salt 1 tablespoon Dijon mustard ¼ teaspoon ground black pepper, to taste ⅛ teaspoon cayenne pepper, optional

Instructions

1. Preheat oven to 400F.

2. Melt the avocado oil. Juice the lime. Wash and cut the sweet potatoes into spears.

3. Mix all ingredients apart from sweet potatoes in a large bowl.

4. Toss sweet potatoes in mixture and combine well.

5. Place potatoes on baking sheet lined with parchment paper or silpat and bake for 20 minutes. Then turn over and cook for another 10 minutes.

6. Remove from oven. If necessary, reduce heat and return potatoes to the oven to keep warm.
