Chocolate Covered Pomegranate Cups

Ingredients

1 pomegranate 8 ounces dark chocolate, (at least 70% cocoa) ½ teaspoon avocado oil

Instructions

1. Arrange about a dozen mini muffin cups on a small baking sheet.

2. Cut open pomegranate, and remove seeds. Chop chocolate into slivers.

3. Place 1 tablespoon of pomegranate seeds inside each muffin cup and set aside.

4. In a small saucepan, heat 1 cup of water until hot, but not boiling.

5. Place avocado oil and chocolate in a heat-proof bowl and place bowl in hot water. Make sure the water does not reach more than halfway up the outside of the bowl.

6. Gently stir the chocolate until melted all the way through.

7. Using a teaspoon, pour enough chocolate into each mini muffin cup to completely cover the seeds. Place one or two more seeds on top of the chocolate.

8. Refrigerate mini cups until chocolate is completely solid.

9. Enjoy cold.
