Chocolate Pudding

Ingredients

⅔ cup cane sugar ⅓ cup cocoa powder 3 tablespoons cornstarch ¼ teaspoon sea salt ¼ teaspoon instant espresso powder, optional 2 ¼ cups oat milk, or milk of choice 1 teaspoon vanilla parchment paper, or plastic wrap

Instructions

1. Combine sugar, cocoa powder, cornstarch, salt, and espresso powder in a sauce pan. Whisk to thoroughly combine.

2. Place pan over medium heat and slowly whisk in milk.

3. Stir constantly until mixture comes to a boil. Once at a boil, continue to cook for 1 additional minute.

4. Remove pan from heat and whisk in vanilla.

5. Transfer pudding to individual serving dishes or a large bowl.

6. Gently press a piece of parchment paper or plastic wrap into the top of the pudding to prevent a skin from forming.

7. Place pudding in refrigerator and chill completely, about 2-4 hours. Pudding may also be enjoyed warm.
