Classic Mashed Potatoes

Ingredients

5 large potatoes 1 tablespoon sea salt, plus more to taste ΒΌ cup extra virgin olive oil, or more as needed ground black pepper, to taste

Instructions

1. Chop potatoes into 2 inch chunks. Place potatoes in a large stock pot and cover by two inches with filtered water. Add two thirds of the sea salt.

2. Cover and bring to a boil, cooking for 20-25 minutes until potatoes mash easily with a fork.

3. Drain in a large colander and reserve about a cup of the cooking water. Immediately mash potatoes using a potato masher. Fold in the oil and remaining sea salt. Then whip smooth using a hand mixer, adding small amounts of cooking water at a time to reach desired consistency.

4. Season to taste with freshly ground black pepper and additional sea salt to taste.
