Cocoa Date Truffles

Ingredients

For the truffles: 12 dates 4 tablespoons unsweetened cocoa powder, plus more for coating 3 tablespoons almond butter For the toppings: 3 tablespoons dried tart cherries, optional 1 tablespoon coconut oil, optional OR 1 tablespoon ground coffee, optional

Instructions

1. For the truffles: Remove pits from dates and chop roughly.

2. Place your coating of choice in a small pile on wax paper. For coffee truffles, a light sugar coating complements the slightly bitter coffee taste.

3. Place dates, cocoa, and almond butter in a food processor and pulse to blend.

4. For the toppings: Add optional dried cherries OR coffee grounds. If you add dried cherries, you may want to add coconut oil to moisten the mixture.

5. Mixture will be wet and crumbly, but should stick together when squeezed.

6. Form 1 inch balls by pinching mixture and rolling it between your palms.

7. Roll truffle in coating and set on a plate or pan. Dust off excess cocoa powder to reduce mess later on.

8. Truffles will be rich and chewy at room temperature, or more dense and truffle-like when chilled.
