Coconut Baked Shrimp

Ingredients

1 ½ pounds shrimp ½ cup coconut oil 2 tablespoons minced garlic ⅓ cup white wine 2 teaspoons sea salt ¼ teaspoon ground black pepper ¾ cup coconut flakes 1 tablespoon dried parsley 2 teaspoons lemon juice

Instructions

1. Preheat oven to 425F. Devein and peel the shrimp. Melt the oil.

2. In a bowl, combine the shrimp, garlic, and white wine.

3. Place shrimp mixture in a shallow baking dish in a single layer. Season with salt and pepper.

4. Using the same bowl, mix melted oil, coconut flakes, and parsley until well combined.

5. Using your fingers, sprinkle the mixture evenly over the shrimp.

6. Bake about 15 minutes or until the shrimp are pink and opaque and the topping is nicely browned.

7. Serve with a drizzle of lemon juice.
