Coconut Cauliflower Rice

Ingredients

1 head cauliflower 2 tablespoons cilantro 8 ounces full fat coconut milk 1 teaspoon honey, optional 2 tablespoons lime juice sea salt, to taste ground black pepper, to taste

Instructions

1. Coarsely chop the cauliflower. Chop cilantro.

2. Place the chopped cauliflower in a food processor and pulse until it reaches a rice-like texture.

3. Add the cauliflower, coconut milk, and optional honey to a saucepan. Bring to a boil.

4. Let simmer for around 8-10 minutes, until cauliflower cooked to your liking. It will be somewhat creamy. For a less creamy texture, use a little less coconut milk.

5. Stir in the lime juice and cilantro. Season with sea salt and pepper to your preference and enjoy.
