Coconut Flour Pancakes

Ingredients

6 tablespoons coconut flour 6 eggs 2 tablespoons unsweetened applesauce 4 tablespoons coconut oil, plus extra for the pan 4 ounces full fat coconut milk ½ teaspoon baking soda ½ teaspoon apple cider vinegar

Instructions

1. If your coconut oil is hard, melt in a separate bowl.

2. Heat a skillet over medium high heat. Stir together the coconut flour and eggs until a smooth paste forms. Stir in the applesauce, oil, and coconut milk until smooth.

3. Just before cooking, stir in the baking soda and vinegar.

4. Add about a tablespoon of oil into the hot pan.

5. Pouring about 1/4 cup of batter at a time, cook the pancakes, flipping when the batter starts to bubble so that they are nice and browned on both sides.

6. For best results, make smallish pancakes so they are easier to flip.
