Creamy Avocado and Cilantro Dressing

Ingredients

1 jalapeño pepper, optional 2 limes 1 large avocado ½ cup extra virgin olive oil ½ bunch cilantro 3 cloves garlic ¼ cup fresh dill 1 teaspoon cumin 1 tablespoon honey 1 tablespoon apple cider vinegar ¾ teaspoon sea salt, to taste ¼ cup water

Instructions

1. Wearing gloves for protection, stem and seed the optional jalapeño. Juice the lime. Peel and pit the avocado.

2. Add all of the ingredients to a blender or food processor and blend until creamy.

3. Add more filtered water if you prefer a thinner consistency, and add extra salt to your taste.

4. Store in an airtight container or jar in the fridge. If time allows, refrigerate for at least 20 minutes before serving to allow the flavors to meld. Keeps for about 5 days.
