Creamy Cauliflower Soup with Bacon

Ingredients

1 head cauliflower 4 cloves garlic 4 cups chicken broth 6 slices bacon ¾ teaspoon sea salt, or to taste ground black pepper, to taste 6 green onions

Instructions

1. Break the cauliflower into florets. Peel and coarsely chop garlic. Boil both in chicken broth until very tender, about 10 - 12 minutes.

2. In the meantime, cook the bacon until crisp. Let drain on a paper towel and finely mince.

3. Using an immersion blender, puree the soup until smooth. Season with salt and pepper to taste.

4. Mince the green onion.

5. Serve soup piping hot topped with bacon, green onions, and additional black pepper.
