Creamy Polenta

Ingredients

1 onion 2 tablespoons extra virgin olive oil 2 teaspoons minced garlic ¾ teaspoon sea salt, or to taste 4 cups chicken broth 1 cup cornmeal ground black pepper, to taste

Instructions

1. Preheat oven to 350F. Peel and chop onion.

2. In a Dutch oven, heat half of the oil over medium heat. Add the onion, garlic, and sea salt and cook until the onions begin to soften.

3. Add the broth and bring to a boil over medium-high heat.

4. Slowly add the cornmeal while continually whisking until completely combined.

5. Cover the pot and place it in the oven. Bake for 35-40 minutes, stirring occasionally.

6. Remove from the oven and stir in the remaining oil. Season with salt and pepper to taste.
