Curried Tofu Salad

Ingredients

7 ounces tofu 2 stalks celery 1 small onion ¼ cup almonds ¼ cup raisins 3 tablespoons mayonnaise 1 teaspoon curry powder 1 teaspoon dried dill ½ teaspoon sea salt, or to taste ¼ teaspoon ground black pepper, or to taste

Instructions

1. Drain tofu. Chop celery. Peel and finely dice onion. Coarsely chop almonds.

2. Crumble the tofu into a bowl. Add in the rest of the ingredients, season with salt and pepper, and stir well to combine.

3. Store in an airtight container in the fridge for up to 4-5 days.
