Curry Braised Kale and Cabbage

Ingredients

¼ head cabbage 2 ounces kale 1 apple 1 onion 1 ½ tablespoons extra virgin olive oil 1 ½ teaspoons curry powder 3 tablespoons water

Instructions

1. Core cabbage. Coarsely chop cabbage and kale. Peel, core, and chop apple. Peel and slice onion.

2. Heat a skillet over medium-high heat. Add oil to hot pan. Stir in onion and let cook 2-3 minutes.

3. Add apple and curry powder to pan. Sauté 3-4 minutes until onion is starting to soften.

4. Add kale, cabbage, and ⅓ - ⅔ of the water to pan. Stir.

5. Continue cooking until vegetables are soft, 7-8 minutes, stirring frequently.

6. If vegetables start to stick to the pan, add remaining water (you will almost certainly have to do this at least once).
