Curry Chickpea Lettuce Wraps

Ingredients

30 ounces cooked chickpeas 1 red onion 1 red bell pepper ½ bunch cilantro 2 heads romaine ½ teaspoon cumin 1 teaspoon curry powder 1 teaspoon pure maple syrup ¼ teaspoon sea salt, or to taste 6 tablespoons mayonnaise 4 tablespoons fresh mint leaves, for garnish

Instructions

1. Drain and mash the chickpeas in a large bowl. Peel red onion and finely chop. Deseed and slice bell pepper. Chop cilantro leaves.

2. Separate lettuce into individual leaves. You should have two leaves per serving.

3. Mix ground cumin, curry powder, maple syrup, cilantro, red onion, pinch of salt, and mayonnaise into mashed chickpeas.

4. Divide chickpea mixture between the lettuce leaves. Place bell pepper on top of the lettuce wraps and garnish with chopped mint.
