Curry Powder

Ingredients

2 tablespoons cumin seeds 2 tablespoons cardamom pods 2 tablespoons whole coriander seeds 1 tablespoon mustard seeds 1 tablespoon whole fenugreek seeds ¼ cup ground turmeric 1 teaspoon cayenne pepper 1 teaspoon nutmeg ½ teaspoon ground allspice ½ teaspoon cinnamon ¼ teaspoon red chili flakes 1 tablespoon dulse flakes, optional

Instructions

1. Grate nutmeg into a medium size bowl.

2. Use a coffee or spice grinder to grind the whole spices in amounts small enough to create a fine powder without crowding the grinder.

3. Mix all grated, ground, and powdered spices together in bowl and store in jar out of direct sunlight.
