Dark Chocolate Bark

Ingredients

1 pound dark chocolate ½ cup macadamia nuts, pecans or pistachios ½ cup dried cherries, no sugar-added ⅛ teaspoon sea salt, or to taste

Instructions

1. Line a baking sheet with parchment paper, and set aside.

2. Coarsely chop the chocolate. Finely chop the nuts.

3. Using a double boiler, melt the chocolate until smooth.

4. Stir in the chopped nuts and dried cherries, reserving a few tablespoons of each for finishing.

5. Pour the mixture onto the pan and spread into an even layer (it won’t cover the whole pan).

6. Sprinkle reserved chopped nuts and cherries over the top.

7. Sprinkle sea salt sparingly over the top.

8. Refrigerate for about 30 minutes, or until set.

9. Cut or break the bark into 1 inch pieces and serve.

10. Store leftovers in an airtight container in the fridge.
