Fireman's Breakfast Casserole

Ingredients

extra virgin olive oil, for greasing 1 onion 1 green bell pepper 1 pound ground pork 8 ounces sliced mushrooms ¾ teaspoon sea salt, or to taste ½ ground black pepper, or to taste 6 eggs ½ cup almond milk, or milk of choice aluminum foil

Instructions

1. Lightly grease an 8 x 6 inch baking dish. Preheat oven to 350F.

2. Peel and chop onion. Core, deseed, and chop bell pepper.

3. Heat a dry non-stick pan over medium-high heat. Crumble pork and cook 4-5 minutes until browned.

4. Add in mushrooms, onion, and bell pepper to the pan and cook over medium heat for 6-7 minutes. Season well with salt and pepper.

5. Break eggs into a bowl, add almond milk and whisk until fully incorporated.

6. Place pork and veggie mixture in baking dish. Pour egg mixture over, cover with foil, and cook for 30 minutes. Uncover and cook for another 30 minutes.
