Fireman's Breakfast Casserole (DF)

Ingredients

extra virgin olive oil, for greasing 1 onion 1 green bell pepper 1 pound ground pork 8 ounces sliced mushrooms coarse sea salt, to taste ground black pepper, to taste 6 eggs ½ cup coconut cream aluminum foil

Instructions

1. Lightly grease an 11x7 inch baking dish. Preheat oven to 350F.

2. Chop onion. Core, deseed, and chop bell pepper.

3. Heat a dry non-stick pan over medium-high heat. Crumble pork and cook 4-5 minutes until browned.

4. Add in mushrooms, onion, and bell pepper to the pan and cook over medium heat for 6-7 minutes. Season well with salt and pepper.

5. Break eggs into the baking dish keeping the yolks intact. Try to evenly distribute the egg yolks around the pan. Poke a hole in each of the yolks with a knife. Pour the cream over the eggs.

6. Add in the pork and veggie mixture to the baking dish. Cover with foil, and cook for 30 minutes. Uncover and cook for another 30 minutes.
